Hearty Spinach Salad

Hearty Spinach Salad

Not sure how to get your greens and beets in? Try this recipe provided by a WLA patient!

3 large eggs, hardboiled and chopped
1 bag of baby spinach, washed and hard stems removed
4 tbsp. blue cheese dressing, divided-recipe follows
1/2 an 8 oz. can of beets, sliced into strips
1/2 cup of carrots, shredded
3 tbsp. chopped pecans, toasted (heat dry over low heat until brown and fragrant)

Toss spinach and half of blue cheese dressing in a large bowl. Divide between two plates. Top with chopped eggs, beets, carrots, and pecans. Drizzle with remaining dressing. Sprinkle with fresh ground black pepper to taste.
