Southwestern Stuffed Acorn Squash

3 Acorn squash (3/4-1 lb. each)

5 oz. bulk turkey sausage

1 small onion, chopped

1/2 med. bell pepper, chopped

1 clove gablrlic, minced

1 Tbl chili powder

1 tsp ground cumin

2 cups cherry tomatoes, chopped

1-15 oz can black beans, rinsed & drained

1/2 tsp salt

dashes hot suace to taste

1 cup shredded Swiss cheese

1. Preheat oven to 375*F

2. Prepare squash by cutting in half and scraping out seeds/pulp. Spray cookie sheet. Place squash halves cut side down on cookie sheet & bake about 45 min. until tender.

3. Meanwhile spray skillet and heat over med. heat. Brown sausage, breaking up into small pieces- about 3-5 min. Add onion and pepper- cook about 3-5 min. Stir in garlic and seasoning- cook about 30 sec. Stir in tomatoes, beans, salt, and hot sauce. Cover, reduce heat, and simmer about 10-12 min.

4. When done remove squash from oven & turn heat down to 325*F. Fill squash cavities with meat/bean mixture. Top with cheese and return to oven until cheese is melted. Makes 6 servings.
